Mini Glazed Lemon Loaf
3 tablespoons butter or margarine, melted
1/3 cup granulated sugar
2 tablespoons sour cream
1 teaspoon lemon zest
1/4 teaspoon lemon extract
1/2 cup all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup confectioners' sugar
1 - 2 tablespoons lemon juice
Makes 1 mini loaf
Preheat oven to 350°F. Lightly spray pan with vegetable pan spray.
In a small bowl, combine flour, baking powder and salt. In medium bowl, combine melted butter, sugar, egg, sour cream, zest and extract; whisk thoroughly. Gently fold in flour mixture, mixing only until incorporated. Pour batter into pan.
Bake 28-32 minutes or until toothpick inserted in center comes out clean. Cool cake in pan on cooling rack 5 minutes; remove from pan. Cool completely. Combine confectioners' sugar and lemon juice; drizzle over top of cooled loaf.
