Lemon Blueberry Muffins
3 cups all purpose flour
1 1/3 cups granulated sugar
1 1/2 tsp. baking powder
1/2 tsp. salt
1 cup milk
2/3 cup butter , melted
1 tsp. lemon extract
2 cups frozen blueberries , tossed with 1 tbsp. all purpose flour
Preheat oven to 375?F. Spray pan cavities with vegetable pan spray.
In a medium mixing bowl, whisk together flour, sugar, baking powder, and salt. Set aside.
In large mixing bowl, whisk together milk, melted butter, egg and lemon extract. Add flour mixture and stir until just moistened. Do not overmix. Gently fold in blueberries with rubber spatula.
Divide batter evenly into pan cavities (wells will be full). Bake for 20-22 minutes or until toothpick inserted in center comes out clean. Cool in pan 5 minutes before removing.
