Easy Chocolate Cake
2 cups all purpose flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 cups granulated sugar
3/4 cup (1 1/2 sticks) butter or margarine
1 1/2 cup milk
1 tsp. vanilla
3 oz. (3 squares) unsweetened chocolate , melted

All ingredients should be at room temperature. Preheat oven to 350ºF. Spray 2 nine-inch round pans with vegetable pan spray.
In a small bowl, combine flour, baking powder, baking soda and salt. In mixer bowl, cream butter and sugar until light and fluffy. All at once, add milk, eggs, vanilla and melted chocolate; mix well (mixture will not look smooth). Add flour mixture. Blend at medium speed 2-3 minutes or until mixture is smooth and thick, scraping down as needed. Pour batter into prepared pans.
Bake 45-50 minutes or until cake tester inserted in center comes out clean. Cool cakes 10 minutes in pans. Unmold cakes onto cooling grid; cool completely. Frost as desired.
