Cranberry Chocolate Coffeecake
Ingredients:
- Struesle
- 1 stick butter , melted
- 1 1/3 cups all purpose flour
- 2/3 cup granulated sugar
- 1/2 cup miniature chocolate chips
- 1/2 cup dried cranberries
- Coffeecake
- 3 cups all purpose flour
- 1 1/2 tsp. salt
- 1/2 tsp. cinnamon
- 1 tsp. baking powder
- 3 sticks (1 1/2 cups) butter, softened
- 2 cups granulated sugar
- 4 eggs
- 1/2 cup eggs
- 1 can (14 oz.) whole berry cranberry sauce
Instructions:
Step 1
Preheat oven to 325F. Lightly grease 9x13 baking pan; set aside. For streusel, combine melted butter, flour and sugar; mix until crumbly. Stir in chocolate chips and cranberries; set aside.
Step 2
Cream butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Add flour mixture alternating with milk, starting and ending with flour. Spread half of the batter over bottom of prepared pan. Sprinkle 1 cup of the streusel mixture over batter. Carefully spoon cranberry sauce over streusel; spread evenly. Spoon remaining batter over filling, spreading evenly. Sprinkle with remaining streusel.
Step 3
Bake 60-65 minutes or until cake tester inserted in center comes out clean. Cool completely.
