Coconut Spritz Cookies
1 1/2 cups (3 sticks) butter softened
1 cup granulated sugar
3/4 cup shredded coconut (finely chopped)
1 teaspoon baking powder
3 1/4 cups all-purpose flour
About 6-7 dozen cookies. Each cookie serves 1.
Preheat oven to 375°F. In large bowl, cream butter and sugar with electric mixer until light and fluffy. Beat in egg, coconut, and vanilla. Combine flour and baking powder; gradually add to creamed mixture. Mix just until combined. Place dough in cookie press and with desired disk press cookies onto ungreased cookie sheet. Bake 10-12 minutes or until edges are lightly browned. Cool on cookie sheet on rack 2 minutes; remove from cookie sheet and cool completely.
