Citrus Avocado Cupcakes
Ingredients:
- 1 package (18.25 ounces) yellow cake mix
- 1 package (3.4 ounces) instant vanilla pudding mix
- 4 eggs
- 1/2 cup water
- 3/4 cup pureed avocado (1 medium avocado)
- 1/4 cup vegetable oil
- 2 tablespoons lemon juice
- 2 tablespoons lime juice
- 2 tablespoons orange juice
- zest from one orange , finely grated (about 1 tablespoon)
- zest from one lemon , finely grated (about 1 teaspoon)

About 24 cupcakes.
Instructions:
Step 1
Preheat oven to 350°F. Line muffin pan with baking cups.
Step 2
Puree avocado in food processor until smooth. In large mixing bowl, combine cake mix, pudding mix, eggs, water, avocado puree, oil, juices and zest; beat on low speed until combined. Beat on medium speed 2 minutes. Spoon into prepared pan, filling cups 3/4 full.
Step 3
Bake 18-20 minutes or until a wooden pick inserted in center comes out clean. Cool completely before decorating.
