Cinnamon Bear Roll

Ingredients

  • 8 cups all-purpose flour
  • 2 packages fast-rising yeast
  • 1/2 cup granulated sugar
  • 3/4 teaspoon salt
  • 1 1/2 cup water
  • 1 1/2 cup butter
  • 3 eggs (lightly beaten)
  • 2 tablespoons butter, melted
  • 1/2 cup granulated sugar
  • 1 tablespoon ground cinnamon

Cinnamon roll serves 12.

Instructions:

Step 1

Reserve 1 cup flour. Mix remaining flour, yeast, sugar and salt in large mixing bowl. Heat water and butter until hot to touch (125-130°F). Stir hot liquid into flour mixture, mix in beaten eggs. Add reserved flour to make a soft dough. On floured surface, knead 10-15 minutes until smooth and elastic. Cover dough and let rest 10 minutes.

Step 2

Roll out dough on floured surface to 15 x 18 in. rectangle. Brush surface with melted butter, sprinkle sugar and cinnamon evenly over surface. Roll from long edge, pinch ends together to seal. Shape into 16 in. long loaf. Divide in half. Cut half of dough into 1 in. slices for cinnamon rolls. Place in greased 8 in. square pan, cover. Let rise 45 minutes or until double in size. Cut 1 in. slice from remaining half, cut slice in half. Grease front and back of Cuddly Bear pan. Do not use core. Place dough in back half of pan, press dough to general shape of pan. Place one half of slice in each bottom paw; cut cinnamon surface should face upward. Cut an 18 x 12 in. piece of foil; fold into an approximately 5 in. square. Place foil inside opening in end of pan between dough and pan, foil should be large enough to go inside upper half of pan. When pan halves are clipped together, foil should completely cover opening in end of pan. Attach front half of pan with clips. Tuck foil inside top half. Let rise about 45 minutes in a warm place or until doubled in size. Dough will be about 1 in. from top of pan and will finish rising as it bakes.

Step 3

Preheat oven to 350°F. Bake rolls 20-25 minutes, Bear 40-45 minutes.
