Carrot Spice Mini Muffins
2 tablespoons vegetable oil
1/4 cup applesauce
1 egg white
1/2 cup all-purpose flour
1/4 cup granulated sugar
1/2 teaspoon baking powder
1/4 teaspoon ground cinnamon
1/3 cup finely grated carrots
finely chopped pecans or walnuts (optional)
1 dozen mini muffins.
Preheat oven to 375ºF. Spray pan with vegetable pan spray; set aside.
In small bowl, combine oil, applesauce and egg white. In second bowl, mix flour, sugar, baking powder and cinnamon; all at once, add to egg mixture. Stir until just combined. (Do not overmix.) Gently fold in carrots. Divide batter into muffin pan, filling cavities about halfway full. Bake 7-10 minutes or until golden. Cool 2-3 minutes and remove from pan.
