Applesauce Muffins
Ingredients:
- 8 tablespoons butter
- 2 1/4 cups all purpose flour
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 1/2 teaspoons cinnamon
- 1/2 teaspoon salt
- 3 eggs
- 1 cup brown sugar
- 1 1/2 cups applesauce
- 1/3 cup raisins
Makes:
12 muffins.
Instructions:
Step 1
Preheat oven to 375°F. Arrange flat sided baking cups on a sheet pan.
Step 2
In a microwave safe bowl, melt butter on high for 45-60 seconds. Set aside.
Step 3
In a large mixing bowl, sift together flour, baking powder, baking soda, cinnamon, and salt. Set aside.
Step 4
In another large bowl, whisk together eggs and brown sugar until well combined. Add applesauce and melted butter and whisk until smooth.
Step 5
Pour apple mixture over flour mixture. Add raisins and stir ingredients with a spatula until flour is just incorporated. Do not over mix.
Step 6
Fill baking cups 2/3 full. Bake for 20 minutes, or until muffins are light golden brown.
