Apple Cranberry Mini Loaves


  • 2 1/3 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 4 tablespoons (1/2 stick) butter, softened
  • 2/3 cup firmly packed brown sugar
  • 2 eggs
  • 1 cup milk
  • 2 apples peeled and finely chopped (about 2 cups)
  • 1 cup dried cranberries coarsely chopped
  • 1 cup confectioners' sugar
  • 1 teaspoon ground cinnamon (for cinnamon drizzle)
  • 2-4 teaspoons milk

Step 1

Preheat oven to 350°F. Spray pan with vegetable pan spray.

Step 2

In large bowl, combine flour, baking powder, 1/2 teaspoon cinnamon and salt; mix well.

In large bowl, beat butter and brown sugar with electric mixer until light and fluffy. Add eggs, one at a time; add vanilla. Alternately add flour mixture and milk, mixing until just combined. Stir in apples and chopped cranberries. Divide batter evenly into prepared pan.

Step 3

Bake 26-30 minutes or until toothpick inserted in center comes out clean. Cool in pan on cooling rack 10 minutes; remove from pan and cool completely.

Step 4

For drizzle, combine confectioners’ sugar, 1 teaspoon cinnamon, and milk; mix well. Spoon drizzle over cooled mini loaves.
