Step 1

2 DAYS IN ADVANCE

Make horn. Prepare royal icing following recipe directions. Tint a portion violet/rose combination (for dark violet). On parchment paper-covered board, use tip 12 and white royal icing to pipe a spiral horn, 6 in. high and 1 in. dia. at base, tapering to 1/2 in. dia. at top. Use tip 105 and dark violet royal icing to pipe six elongated reverse shell curls, 3 in. long, to be positioned in mane to extend off cake. Let all dry 24 hours.

Step 2

1 DAY IN ADVANCE

Bake and cool pony cake. Cake is one layer, 2 in. high. Place cake on foil-wrapped cake board, cut to fit.

Prepare buttercream icing following recipe directions. Tint portions violet/rose combination (for light and dark violet) and black. Reserve some white. Use knife to trim off harness area of cake. Use spatula and white buttercream icing to ice sides smooth.

Step 3

Decorate cake. Use tip 3 and buttercream icing to pipe in white eyes, black pupils and light violet inner ear and nostril. Smooth all with finger dipped in cornstarch. Use tip 3 and buttercream icing to outline black eyes and lashes and light violet head, nostril, inner ear and mouth. Use tip 16 and light violet buttercream icing to cover head with stars, leaving horn area open.

Step 4

Assemble and complete cake. Use tip 3 and dark violet buttercream icing to attach horn to cake, inserting 1 in. into cake. Use tip 105 and dark violet buttercream icing to pipe elongated shell mane. Insert royal icing curls. Use tip 16 and white buttercream icing to pipe shell bottom border.
