Step 1

COLORS TINTED

Fondant:

1. Tint ultra-concentrated fondant. Use Color Right base colors and QuickCount color formulas to tint fondant in the following shades:

? Bright and Bold Purple: 1 oz. white fondant + 4 B + 55 P

? Pastel Purple: 1 oz. white fondant + 3 B + 1 R + 6 P

? Neon Purple: 1 oz. white fondant + 9 B + 1 R + 38 P

2. Mix ultra-concentrated fondant with white fondant.

? For bright and bold purple, mix a 1/2 in. ball ultra-concentrated shade with 2 oz. white fondant

? For pastel purple, mix a 1/2 in. ball ultra-concentrated shade with 2 oz. white fondant

? For neon purple, mix a 1/2 in. ball ultra-concentrated shade with 2 oz. white fondant

Reserve a 1/4 in. ball white fondant.

Batter:

Use Color Right base colors and QuickCount color formulas to tint batter in the following shades:

? Pastel Purple: 4 1/2 cups batter + 6 P + 2 B

? Neon Purple: 4 1/2 cups batter + 18 P + 6 B + 2 R

Step 2

Make fondant balloons 2 days in advance.

Tint fondant following color formulas above. Roll out fondant colors, separately, 1/16 in. thick. Use ?A? and ?B? size round cut-outs to cut three balloons in each color.

For balloon knots, cut triangles about 1/4 in. to 1/2 in. high, to match balloon color. For highlights, shape reserved white fondant into small teardrops. Use damp brush to attach to balloons. Let all pieces dry at least 24 hours.

Step 3

Assemble balloons.

Use thinned fondant adhesive to attach balloons and knots to lollipop sticks. Let dry, about 1 to 2 hours.

Step 4

Make layered cake.

Prepare batter according to package directions. Tint batter following color formulas above. Bake and cool cakes.

Step 5

Assemble cake.

Level, fill and stack layers with white icing on cake plate, for a 3-layer cake, 4 in. high. Insert balloon decorations in cake top; trim sticks as needed.
