Step 1

2 DAYS IN ADVANCE

Make cookies. Prepare and roll out cookie dough following recipe directions. Use three largest (4.5 in., 3 3/8 in., 2 3/4 in.) cutters from 6-pc. blossom nesting plastic cutter set to cut five flower cookies. Use medium Cut-Out from rounds Cut-Outs fondant cutters to cut five flower center cookies. Use patterns and knife to cut body, arm, wing and tail cookies. Bake and cool all cookies.

Step 2

Cover cookies. Prepare royal icing following recipe directions. Tint small portions sky blue, violet/rose combination (for violet), lemon yellow/golden yellow combination (for yellow), leaf green/ lemon yellow combination (for green). Reserve remaining white. Thin colors following recipe directions. Place flower and flower center cookies on cooling grid over parchment paper-covered pan. Cover cookies with icing, two in violet and one each in remaining colors. Let dry 24 hours.

Step 3

Make fondant flowers and ladybug. Tint 1 and 1/3 oz. white fondant rose/royal blue combination (for rose), a 1 and 1/8 in. ball lemon yellow/golden yellow combination (for yellow) and a 1 and 1/8 in. ball black. Use 9 in. fondant roller with pink guide rings to roll out fondant 1/16 in. thick.

Use third largest (2.75 in.) blossom cutter and rose fondant to cut two flowers. Use wide end of tip 2A and yellow fondant to cut two flower centers. Use damp brush to attach centers to flowers.

For ladybug, use third largest (3 1/4 in.) cutter from 4-pc. circles nesting metal cutter set and rose fondant to cut round body. For top of body, use 3 1/4 in. circle cutter to cut a black fondant circle, then use knife to cut into a semi-circle, 1 in. wide. Use wide end of tip 1A to cut a black circle for head and narrow end of tip 1A to cut four black circles for spots. Use knife to cut black wing line, 1/8 in. wide x 2 1/8 in. long. Use damp brush to attach all pieces to rose body. Let flowers and ladybug dry overnight on cornstarch- dusted board.

Step 4

Prepare and cover base board.Tint 96 oz. white fondant light rose. Prepare and cover 20 in. x 22 in. foamcore board, 1/2 in. thick, with rose fondant.

Step 5

1 DAY IN ADVANCE

Bake and cool Hello Kitty cake. Place on foil-wrapped board, cut to fit.

Step 6

Decorate cake.Prepare buttercream icing following recipe directions. Tint portions black, lemon yellow/golden yellow combination (for yellow) and red-red/ Christmas red combination (for red). Reserve remaining white and red. Use tip 12 and black icing to pipe in eyes. Use tip 3 and black icing to pipe outline whiskers. Use tip 12 and yellow icing to pipe in nose. Use tip 16 to cover face with white stars. Position cake, body and arm cookies on prepared board.

Step 7

Decorate cookies.Use pattern and toothpick to trace stripes on body cookie. Use tip 16 and black and yellow buttercream to pipe stars in striped sections. Position wings, tail and feet cookies on cake. Use tip 16 and white buttercream icing to cover wings, arms, tail and feet with stars. Use heavier pressure for higher stars on front foot.

For flower cookies, use reserved royal icing to attach flower centers to flowers. Use dry brush and leaf green, lilac purple, sapphire blue and yellow Pearl Dust to highlight petal details.

Step 8

Make antennae. Use reserved yellow fondant to roll two 3/4 in. balls for ends. Use black fondant to roll two logs, 1/4 in. dia. x 1 1/2 and 2 1/4 in. long. Insert logs into yellow ends.

Step 9

Position details. Position fondant flowers and ladybug on cake. Insert antennae in top of head. Position flower cookies on board.

Step 10

Decorate message. Use tip 5 and reserved red buttercream icing to print message.
