Step 1

2 DAYS IN ADVANCE

Make small flowers. Tint 5 oz. white fondant violet/rose combination (for violet). Tint 2 oz. lemon yellow/golden yellow (for yellow) and 2 oz. christmas red/red-red combination (for red). Roll out violet, red and yellow fondant, separately 1/16 in. thick. Use small ejector from set to cut 242 violet, 30 red and 30 yellow flowers. Use impression strip from flower cutter set to imprint. Let dry on cornstarch dusted board.

Step 2

Bake and cool 6 in., 8 in. and 10 in. round cakes. Each cake is 4 in. high (two 2 in. layers). Prepare buttercream icing following recipe directions. Prepare and cover cakes with black fondant. Prepare cakes for stacked construction.

Step 3

1 DAY IN ADVANCE

Make large flowers. Tint white fondant: 5 oz. Christmas red/ red-red combination (for red), 7 oz. lemon yellow/golden yellow combination (for yellow). Use 9 in. fondant roller with pink guide rings to roll out red and yellow fondant 1/16 in. thick. Use large rose cutter from gum paste flower cutter set to cut 10 red flowers and 11 yellow flowers. Place flowers on thin shaping foam. Use large end of veining tool from 10-pc. gum paste/fondant tool set to ruffle edges. Place flowers under storage board flap before completing.

Use flower impression mat and remaining yellow fondant to make 21 gerbera daisy centers. Use piping gel to attach to large flowers. Let dry on board.

Step 4

Complete cake. Working one flower at a time, brush edges with red or goldenrod Color Dust. Use piping gel to attach large flowers randomly to cake.

For small flowers, use tip 2 and 1/4 cup icing tinted yellow to pipe dot centers.
