2 days in advance: Prepare zebras, monkeys,
carousel canopy and pillar placement pattern.
Tint fondant: 48 oz. dark green, 6 oz. brown,
1/2 oz. light brown, Reserve all excess fondant.
Zebras: Position horses on pillars at various
heights, allowing 3 in. at bottom for inserting
in cake. Insert in craft block to decorate. Paint
details with thinned royal icing: black stripes,
yellow saddles and bridles, ivory pillars. Let
dry at least 24 hours.
Make monkeys: Shape and attach
features for each
monkey in brown
fondant with damp
brush: 3/4 in. x 1 in.
torso, 3/8 in. x 1 3/4 in.
legs, 1/4 in. x 1 1/2 in.
arms, 1/4 in. x 2 1/2 in.
tail, 3/4 in. ball head.
For ears, roll out
brown fondant 1/8 in.
thick. Cut a circle
using wide end of
tip 2; cut in half and
attach. For muzzle,
roll out light brown
fondant 1/8 in. thick.
Cut a circle using
of tip 2A; attach.
Draw eyes, nose
and mouth with
black edible marker.
Canopy: Roll out dark green fondant 1/8 in. thick.
Use fondant cutter to cut a 13 in. circle; cover
canopy, securing with piping gel. Use pattern
and knife to cut 16 leaves; cut triangle slits in
various sizes. Paint veins with Leaf Green icing
color/lemon extract mixture. Attach leaves to
canopy with damp brush. Cover finial top with
dark green fondant.
