Mini Walnut Banana Bread Muffins Recipe

Step 1

Preheat oven to 375°F. Lightly spray mini muffin pan with vegetable pan spray.

Step 2

In large bowl, combine the flour, baking powder, baking soda and salt; set aside. In medium bowl, whisk together the egg, brown sugar, milk, oil, vanilla, bananas and walnuts. Stir into flour mixture just until combined. Divide mixture into prepared pans, filling almost full. Sprinkle muffins with additional walnuts, if desired.

Step 3

Bake 12 to 14 minutes or until firm to the touch. Cool muffins in pan 5 minutes. Transfer to wire rack to cool completely.

Rated 4 out of 5 by from They are nice. My only complaint is that the recipe made a little more than what would fit into the muffin tin. I used the Wilton mini-muffin tin, but I put paper liners in, so that may have made a difference. Anyway, I made a big pancake out of the extra batter and it was good. I substituted chocolate chips for the walnuts, by the way. I've made a lot of muffins through the years, but this was my first attempt at mini-muffins.

Rated 4 out of 5 by from This is a great basic recipe. I added a little cinnamon and vanilla and my muffins turned out great! I'm a little disappointed that I didn't have very many walnuts- I need to make sure to have more next time! :)
