Step 1

Preheat oven to 350°F. Lightly spray pan with vegetable pan spray.

Step 2

In a small bowl, combine flour, baking powder and salt. In medium bowl, combine melted butter, sugar, egg, sour cream, zest and extract; whisk thoroughly. Gently fold in flour mixture, mixing only until incorporated. Pour batter into pan.

Step 3

Bake 28-32 minutes or until toothpick inserted in center comes out clean. Cool cake in pan on cooling rack 5 minutes; remove from pan. Cool completely. Combine confectioners' sugar and lemon juice; drizzle over top of cooled loaf.

The cakes mix up easily, can also be made using orange flavorings and the easy icing technique makes it easy but pretty. It's a fun family project as the older kids can mix the batter and the younger kids can do the icing drizzle. Wrap up in a pretty cello bag, tie with a tag and perhaps a small ornament of holly sprig, and you've got a pretty gift that can fit for lots of the "small-gift occasions"!
