In advance: Make fondant trims. Form fingers, arm, cuff and glove and position on back of football pan dusted with cornstarch. Reserve 2 oz. for football trims. Use 3 oz. to form three fingers, each 2 1/2 x 3 3/4 in. diameter. Press together and position. Use 13 oz. to form 8 in. long arm; bend and position. Use 1 oz. to form 2 1/2 x 1/2 x 1 in. thick flattened cuff; attach to arm using damp brush. Use 4 oz. to form 2 3/4 x 2 1/4 x 7/8 in. thick glove. Taper toward wrist, shape three fingers and cut slit for thumb. Attach to cuff. Let dry.
For Mickey, ice smooth eyes and background between ears. Use tip 3 to outline and fill in pupils, mouth and tongue; (pat smooth with fingers dipped in cornstarch). Use tip 3 to outline details.
Cover cake with tip 16 stars. Pipe tip 3 dot highlights on pupils and nose. For football: Pipe tip 3 outline seams. Cover cake with tip 16 stars.
Roll out reserved white fondant 1/8 in. thick; cut using Cutter/ Embosser fitted with straight wheel. Cut two 8 x 1 in. strips; attach for side bands. Reroll fondant to 3/16 in. thick. Cut two 5 1/2 x 3/8 in. wide long strips; attach side by side. Cut seven 1 x 3/8 in. wide short strips; attach over long strips for laces.
Position cakes. Attach Mickey fondant details, trimming arm if needed to fit between chin and football. Cover with tip 16 stars. Pipe tip 3 outlines on glove.
