Step 1

Before starting, please read a helpful hint from the Wilton decorator who made this cake.

In advance: Make flowers in royal icing.

Pipe 23 lilies using tips 366 and 14 and medium blue royal icing. Insert glitter stamens from assortment. Let dry completely.

Step 2

Bake and cool two-layer cake. Position on foil-wrapped cake board . Ice cake smooth in pale blue buttercream icing.

Step 3

Using cake dividing set, mark 16 divisions. Pipe lines down side of cake at markings with tip 3 and medium blue buttercream icing.

Step 4

In every other stripe, pipe drop strings 3/4 in. apart and 3/4 in. deep with tip 3 and medium blue buttercream icing.

Step 5

In remaining stripes, pipe cornelli lace with tip 2 and white buttercream icing.

Step 6

Pipe bead border with tip 4: Use white buttercream icing below cornelli lace; blue buttercream icing below drop strings.

Step 7

Pipe a mound of buttercream icing on top center of cake with tip 2A; attach lilies.

The drop string is traditionally used as decoration on the sides of the cake and is the basis of more ornate string work. Called a "drop" string because the line of piped icing is allowed to "drop" or fall, by itself, before reattaching it to your cake. Pipe a row of single strings or multiple strings in rows of two or three.

The Lily looks best when petals are more pointed. If petals split while piping, slightly widen tip with a thin spatula. Or, add a teaspoon of piping gel to 1 cup stiff royal icing.

The bead shape makes impressive borders outlines and accents on letters and designs; also a cute trim on clothing and gingerbread houses. The basis for making piped hearts and figure piping.

The random lacy design of this free-form technique depends on the continuous curving lines that do not overlap or touch. Can be used in a small design area or on an entire cake surface. Good for wedding, anniversary and other formal event cakes, but lends itself to more casual themes, as well.

Characters or designs are often outlined first, then piped in with stars or zigzags. Outlines can also be used for facial features.
