2 to 3 days in advance: Make flower topper. Use ball pan half to shape two foil curves for drying petals. Roll out gum paste 1/16 in. thick. Use pattern and knife to cut 15 petals. Let dry on cornstarch-dusted curves of foil and pans, placing three or four in each.
For topper base, roll out gum paste 1/8 in. thick; use cookie cutter to cut circle. Assemble flower. Attach bottom layer of seven petals to base with melted candy, overlapping slightly; let set. Attach center layer of five petals with melted candy; support petals with facial tissue. Let set.
Attach top layer of three petals as above. Roll a 1 in. fondant ball and flatten to 1/4 in. thick. Attach for flower center; let set.
