Step 1

Preheat oven to 350ºF. Prepare muffin pan with baking cups.

Step 2

In medium bowl, stir together flour, baking powder, baking soda and salt. In mixing bowl, beat butter with sugar until light and fluffy. Beat in eggs, one at a time. Add sour cream, milk, lime juice, vanilla and zest; mix until combined. Add flour mixture to butter mixture, mixing until just combined. Fill baking cups 2/3 full.

Step 3

Bake 9-12 minutes or until toothpick inserted in middle comes out clean. Cool 5 minutes on cooling grid. Remove from pan; cool completely before icing.

Rated 4 out of 5 by from Comment on the Fluff Frosting. Make sure your bowl and mixer are GREASE FREE! I know this and yet did not heed my own warning and had to toss the first batch. You will know within the first 3 minutes if your fluff isn't going to work, it will stay watery. Also, using cold water is a must! I didn't do that either the first time. The second time I used cold water and everything went according to plan. The flavor is perfect and a good alternative for guests who don't want the fat in regular buttercream.

Rated 4 out of 5 by from In my opinion, the cupcake doesn't taste enough like lime. Next time I will be adding more lime juice and zest. I also tried the frosting. Tried being the key word. I couldn't get the meringue powder to set up at all. Tried twice in case I did something wrong the first time. My meringue powder is new, so I don't know what happened. I ended up frosting them with coconut flavored buttercream. It's sweeter than i think it should be but still very good.

Rated 4 out of 5 by from I loved making these! My favorite part was that I really only needed one ingredient...the meringue powder for the fluff icing, everything else was already in my pantry. The smell of toasted coconut just takes over your whole kitchen! I made these for Mother's Day last year and everyone loved them...even my sister who admited that she was NOT a big fan of coconut.I added food color to the coconut before and pink.

My kids want me to make more Can?t wait to try other recipes. I add green food coloring to add a little to the lime theme. Defiantly something to Try!
