Lemon Filling Recipe

Step 1

Combine sugar, cornstarch and salt in a small saucepan. Gradually add water and whisk until well blended. Whisk in egg yolks, lemon peel and lemon juice. Cook over medium heat, whisking constantly until thick and bubbly. Boil one minute; remove from heat. Stir in butter. Cool to room temperature, without stirring. Fill cupcake.

Rated 5 out of 5 by from I was looking for a way to make my white cupcakes with buttercream frosting a little more exciting, so I tried this lemon filling. I had never made filled cupcakes before, I put a little too much in the first couple and the cupcakes "exploded", but once I got the hang of it I found it quite easy. They were really yummy, my son loved them and so did my friends that I baked them for.

The first time I used it as a filling for a lemon cake, with a lemon buttercream crumb coat, and the other times I have used a butter or yellow cake, and the freshness of the lemon is just delightful. I added in some of the "Lemon Yellow" color gel to really give it a color pop, too.

Rated 5 out of 5 by from This was simply awesome. Nice tang to it. I made hundreds of cupcakes for daughters graduation party. This was one of the fillings I made. I used the wilton cupcake set to fill them easily as well. I frosted with a plain buttercream. I've also done a layered yellow cake- and put this as a filling between layers of the cake!

Simple instructions and easy to make. I'm enjoying my classes and learning new things. I look forward to the rest of the classes also.

With twelve I made a form of a caterpillar, and the other twelve were the grass on the bottom of the caterpillar. I topped them with different colored cream icing. My family loved them as well as my nephew!!!
