Lemon Basil Cake Recipe


Lemon is a go-to when you want sunny, bright flavor in baked treats. Basil, an unexpected but welcome flavor in cakes, cookies and cupcakes that mirrors the brightness of lemon. In combination, these flavor infusions create a Lemon Basil Cake that is certainly the freshest flavor combination of the season.

Step 1

Preheat oven to 325°F. Prepare Easy Layers Pan Set with vegetable pan spray.

Step 2

In large bowl, stir together flour, baking powder and salt.

Step 3

In large bowl, beat butter and sugar with electric mixer until light and fluffy. Add eggs one at a time, mixing well after each. Add Fresh Basil Flavor; mix well. Add flour mixture alternately with milk, beating until just combined. Divide evenly into pans.

Step 4

Bake 18-21 minutes, rotating pans half way between baking, or until toothpick inserted in center comes out clean. Cool cakes in pan on cooling grid 5 minutes. Loosen edges of cake and remove from pans; cool completely on grid.

Step 5

For filling, beat cream cheese until smooth and creamy. Add confectioners? sugar and Sweet Meyer Lemon Flavor, beating until smooth and well combined.

Step 6

To assemble, cut crowns off of each cake layer. Place first layer on cake board or serving plate. Spread a layer of icing to edges of cake. Repeat, alternating layers of cake and icing.

Rated 5 out of 5 by from Simple & Delicious! I was curious about the lemon basil pairing, seems to be used a lot in baking lately. Love the treatology flavors, saw the recipe, had to try it. Am I glad I did! Family Loved it, I loved it! Agree the basil flavor stands out more on day 2, not so prominent the day you bake, but still if you can wait a day, what an absolute hit! Will I make this again? Yes definitely! Thank You Wilton for making baking even more of an experience than ever before! What a treat!

Rated 5 out of 5 by from For my purposes, I converted this to a gluten-free recipe, and baked in 2 8"-round cake pans (I'm celiac, and have not yet purchased the Easy Layers 5-pan set recommended here. With the corrected version (sugar added) the recipe is easy and complete. The lemon flavor seems to dominate the basil flavor on the day of baking, but the basil comes out more the second day, giving it more balance. Using two cake pans, I was able to use the Bake Even strips, and removing the dome became unnecessary. I also increased the oven temp to 350°F and added a few minutes to the cooking time. Next time I will line the sides of the pans, with the parchment allowing for the cake to rise above the sides. Here's how amazing the flavors are. My wife does not like lemon in any way, shape or form, but agreed to try a taste of this cake with frosting. Then she wanted another taste, and then told me to make sure I saved her some for after dinner.
