Two to three days in advance: Make fondant tree topper. Tint 6 oz. fondant dark green; knead in 1/2 teaspoon Gum-Tex. Roll out 1/8 in. thick. Using pattern, cut tree shape. Let dry 2-3 days on waxed paper-coverd board dusted with cornstarch. Attach to 8 in. cookie stick with thinned fondant adhesive, leaving 4 in. extending at bottom; let dry. Reserve remaining fondant.
Also in advance: Prepare base board. Tint 24 oz. red fondant;
cover base with 18 oz. and reserve remainder.
Bake and cool 2-layer cakes; prepare for Stacked
Construction. Tint 24 oz. fondant ivory, 48 oz. green.
Prepare and cover cakes with fondant; reserve
remaining fondant. Roll out white and reserved tinted
fondant 1/8 in. thick.
For 8 in. cake, cut 12 each red and
green strips 3/4 in. wide x 4 in. long and 24 white strips 3/8 in.
wide x 4 in. long. Attach to cake side with damp brush,
alternating colors. Trim to fit.
For 12 in. cake, tint 4 oz.
fondant blue. Roll out all colors 1/8 in. thick. Cut two to three
trees in each color using cutter from set (ten trees needed).
Attach 3/4 in. apart with damp brush.
Using press with
3-hole insert and green fondant, make 3 in. ropes for bottom
border. Attach with damp brush, trimming to fit between
trees. Pipe tip 2 scrolls on blue trees and tip 1 outline and
dot snowflakes on red trees. Insert tree topper.
