Step 1

In large bowl, combine buttercream, lime zest and juice. Beat with mixer until incorporated.

Step 2

Keep icing covered with a damp cloth until ready to use. For best results, keep icing bowl in refrigerator when not in use. Refrigerate in an airtight container.

Took some time to zest the limes, but not too bad in the end. Work (and I) loved the frosting--so scrumpcious! I just made the full 3 cups of the butter cream frosting and just added a little more lime juice and zest in order to make 3 cups of the key lime frosting. I have extra frosting now...will try to use it on sugar cookies or shortbread.
