Bake and cool cupcakes in White Standard Baking Cups. Cool completely on Cooling Grid.
Prepare Buttercream Icing recipe. Color a portion of icing green.
Using white buttercream icing, ice tops of cupcakes smooth with spatula.
Pour Red Colored Sugar on plate and dip cupcake into sugar.
Using green buttercream icing, pipe Round Decorating Tip 5 line around outside edges of cupcake to resemble watermelon rind. Using white buttercream icing, pipe Round Decorating tip 3 line inside green line. Insert chocolate chips, point side down, into cupcakes to resemble watermelon seeds.
Keep the summer theme alive by turning your cupcakes into a whole assortment of fruit designs. For an orange, ice and dip in Orange Colored Sugar. For strawberries, dip in Red Colored Sugar, add chocolate chip "seeds" and spearmint leaf candy stems.
