The Family Tree Branches Out Cake
Non-stick pan spray
Cake serves 82.
- 12 x12 in. plywood or foamcore board (1/2 in. thick)
- Waxed paper
- Facial tissue
In advance: Make branches. Tape 3 patterns to board; cover with waxed paper. Spray with pan spray; wipe off excess with a tissue. Use royal icing with tip 17 to outline branches; make extras to allow for breakage. Let dry.
Make royal icing flowers. Use tip 101s to pipe 19 white and 21 rose apple blossoms. Use tip 101 to pipe 13 white and 11 rose apple blossoms. Add tip 1s dot centers. Let dry. Attach flowers to branches with dots of royal icing.
Cover base board with Chocolate Fondant.
Bake and cool 3-layer cakes (bake 2 in. high layers; trim 1 to 1 in. high for 5 in. high tiers). Prepare and cover with rolled fondant.
Prepare for Stacked Construction. Pipe tip 5 bead bottom borders.
At reception: Carefully remove branches from waxed paper. Attach to cake sides using royal icing.
Combine Ivory with Brown for ivory shown.
Combine Brown with Red-Red for brown shown.
Combine Rose with Ivory for rose shown.
