Texas Chili
Ingredients:
- 1 lrg mild Ancho chili pepper dried
- 1 pound ground sirloin
- 1 medium onion cut in 4-5 pieces
- 1 clove garlic cut in 4-5 pieces
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 can (28 ounces) plum tomatoes drained, peeled
- 1 (15 ounces) can red kidney beans undrained
- 1 (4 ounces) can green chilies undrained, chopped
- 1/2 teaspoon salt
Makes:
Chili serves 4 cups.
Instructions:
Step 1
Roast dried chili pepper in hot skillet until lightly browned.
Step 2
Split, remove seeds and soak in 2 1/4 cups hot water.
Step 3
In large heavy saucepan (2 qt.) sauté sirloin, do not brown. Break up chunks with wooden spoon. Fit food processor with metal blade. Add onion and garlic.
Step 4
Process 10-12 turns or until finely chopped; add to meat along with chili powder and cumin; sauté until tender.
Step 5
Place tomatoes and chili pepper with water into processor. Process until most chunks are broken up. Add to meat mixture.
Step 6
Add beans, canned chilies and salt. Simmer 15 minutes; taste and add more chili powder if desired. Simmer an additional hour.
Step 7
Serve garnished with sour cream, chopped onions and cilantro.
