Ingredients:
- Pastry for 2 crust pie
- 3 tablespoons butter
- 3/4 cup sugar
- 3 cups sweet potatoes mashed
- 4 eggs separated
- 1 cup milk
- 1 teaspoon clear vanilla extract
- 1/2 teaspoon nutmeg freshly grated
- 1/2 teaspoon cinnamon
- 1/4 teaspoon cloves
- dash salt
Makes: Pie serves 6-8.
instructions
Preheat oven to 350°f. line 9 in. pie pan with half of pastry. cream butter
and sugar. beat in sweet potatoes, egg yolks, milk, vanilla, seasonings and
salt. in a separate bowl, beat egg whites until stiff; fold whites into potato
mixture. pour into pastry shell. bake 50 minutes or until knife inserted near
center comes out clean.
To decorate pie, cut remaining pastry into leaf shapes with cutters. Bake
at 400°F for 9 to 11 minutes or until lightly browned. Place on top of pie
before serving.
