Each mini cake serves 1.
Bake and cool cake 1 1/2 in. deep in sheet pan.
Use gingerbread boy cutter to cut desired amount of cake from pan.
Place gingerbread boy cakes on cooling grid positioned over cookie sheet.
Cover cakes with melted light cocoa candy; refrigerate until set.
Use melted candy in cut parchment bags to pipe white nose, mouth, whites of eyes and zigzag trim on wrists and ankles; use red to pipe tie and green to pipe buttons and light cocoa to pipe pupils. Let set.
