In advance: Make fondant Santa.
Prepare 2-layer cake for rolled fondant; cover with fondant, smooth with Fondant Smoother. Tint a 2 1/2 in. ball of white fondant orange and another violet. Roll out fondant 1/8 in. thick; cut two trees each in orange, violet, red, and green, using cutter from Holiday Set. Attach to cake sides using damp brush. Roll small balls of yellow fondant and attach to trees. For bottom border, roll white fondant logs 1/2 in. wide x 4 in. long, taper at each end. Attach at each petal point with damp brush. Roll small white dots to decorate logs and 1/2 in. balls for between logs; attach with damp brush. Insert fondant Santa into cake top.
