Instructions:

Step 1

Cakes Needed: Several days in advance, using melted Candy Melts®, make 30 chocolate scrolls, 30 leaves and desired monogram pieces.

Several days in advance, using melted Candy Melts®, make 30 chocolate scrolls, 30 leaves and desired monogram pieces.

Step 3

To make leaves: Thoroughly wash and dry lemon leaves. Melt candy according to package directions; use decorator brush to paint underside of leaf with melted candy. Refrigerate until firm and carefully peel leaf from chocolate. Make extras to allow for breakage and set aside.

Step 4

To make scrolls: Cover scroll patterns with waxed paper and pipe scrolls using melted candy in a disposable bag fitted with tip 4. Refrigerate until firm; peel off waxed paper, turn scrolls over and repeat process on back side. Refrigerate until firm. Make extras to allow for breakage and set aside.

Step 5

To make monogram letters: Make patterns of desired letters and cover with waxed paper. Pipe letters using melted candy in a disposable bag fitted with tip 6. Refrigerate until firm, then overpipe letters with tip 3 and melted candy; refrigerate until firm. Attach lollipop stick to back side with melted candy.

Step 6

Ice 2-layer cakes smooth with chocolate buttercream icing. Prepare for stacked construction. Using chocolate buttercream, pipe tip 2 cornelli lace on top of both tiers. Pipe tip 10 bead bottom border on both tiers.

Step 7

At reception: Insert scrolls into cake. Attach leaves to base of scroll with melted chocolate or chocolate buttercream. Insert monogram letters into top tier.
