Santa Pancakes

Ingredients:

  • 2 cups biscuit mix
  • 2 tablespoons light brown sugar
  • 1 1/2 cups (12 ounce can) Undiluted Evaporated Milk or Evaporated Skim Milk
  • 2 teaspoons ground cinnamon
  • 2002-01-01 00:00:00 bananas Mashed
  • 2 tablespoons vegetable oil
  • 2 eggs

Makes: Pancakes serve 2-4.

Place Santa Pan in oven; heat pan and oven to 450°.

In a large bowl, combine biscuit mix, sugar, cinnamon, evaporated milk, bananas, oil, and eggs. Beat or whisk until smooth.

When oven is heated, remove pan. CAUTION: pan will be very hot. Spray pan with vegetable pan spray. Pour two cups of batter in pan.

Pour in circle to cover pan evenly. Push to edges if necessary. Return to oven and bake 6-8 minutes or until top is dry and edges are brown.

Top will not be brown. Invert on serving dish. Repeat for next pancake. Batter may be stored overnight in refrigerator. Stir before using.

Garnish with raisin eyes, cherry nose, jelly hat and confectioners' sugar. If star fruit is available in your area, use as garnish.

Cut pieces of waxed paper to cover face when dusting with sugar

*Make all your batter a day or two ahead of time. Make pancakes up to an hour before serving.

To keep warm: put on cookie sheet, cover loosely with foil, place in 250° oven. Garnish just before serving.
