The writing’s on the wall: This is going to be one very special birthday. Use our Happy Birthday Fondant Imprint Mat to imprint best wishes on white fondant; fill out the words and images with piped icing.

Instructions:

Step 1

In advance: Make letters. Tint 8 oz. fondant green. Roll out 1/8 in. thick. Cut letters. Brush with damp brush and sprinkle on Colored Sugar. Let dry on cornstarch-dusted board.

Step 2

Bake and cool 1-layer cake. Prepare and cover with 80 oz. yellow rolled fondant.

Step 3

Prepare imprinted top. Roll out 24 oz. white fondant 1/8 in. thick. Cut an 11 x 17 in. rectangle; imprint Happy Birthday design using Imprint Mat. Use shell tool from set to fray edges. Brush cake top with water and position imprinted top. Use tip 1 to outline and fill in designs using icing in assorted colors. Attach letters with dots of icing. Pipe tip 5 bead bottom border.
