Perfect Pansies Cake

Purple and yellow pansies pop up from the center of this lofty cake. More pansies surround the sides for a cake that looks more like a floral bouquet.


Difficulty: Easy


Step 1

In advance, make 20-25 pansies using gum paste and royal icing. Set in Flower Cups Forming Cups to dry. Make extras to allow for breakage.

Step 2

Bake and cool 3-layer cake to equal 5 in. height. Ice cake smooth in buttercream icing,

Step 3

Insert lollipop sticks into decorating bag fitted with tip 8 and filled with royal icing. Pull out at same time while squeezing bag. Set aside in craft block to dry. Attach flowers to sticks with gum glue adhesive. Set aside to dry

Step 4

Using tip 5 and buttercream icing, pipe various height stems on cake sides. Attach flowers with dots of icing. Insert flowers on sticks in center of cake. Pipe tip 352 pull out leaves on stems. Pipe tip 352 pull out leaves at bottom border.
