Instructions:

Step 1

In advance: Make cookies. Prepare and roll out dough. Cut 2 cookies per treat using Daisy Cutter. Leave 6 scallops across top; trim sides and straighten bottom edge to make shell shape. Bake and cool cookies.

Step 2

Also: Cover cookies with melted candy. And: Make crown and tail. Tint fondant yellow and green (1/2 oz. each per treat); add 1/8 teaspoon Gum-Tex. Roll out a 1 in. ball of yellow 1/8 in. thick. Use pattern to cut out crown; let dry on waxed paper-covered board dusted with cornstarch. Press a 3/4 in. ball of green fondant onto topper for curved, tapered tail; flatten end, then trim with scissors for fins. Decorate and assemble treats using melted, tinted candy in cut parchment bags. After piping each step, refrigerate until firm. With pink candy, pipe groups of random lines on waxed paper for coral. Trim waist of topper and pipe dots on crown. Attach crown to topper. Cover all grass areas on topper with blue candy for water. Attach topper to bottom cookie. Attach coral pieces behind topper. Attach back cookie using melted candy at base.
