North Pole Shrimp with Cranberry Cocktail Sauce and Pesto

Safety first when serving shrimp or egg based dishes! We suggest you serve perishables on a star-shaped block of ice. It’s decorative as well as practical.

Tools:

Ingredients:

  • water
  • fresh cranberries
  • Fresh greens
  • 2 pounds cooked shrimp chilled
  • 1 cup Pesto sauce prepared
  • 1 cup cranberry cocktail sauce
  • 1/2 cup ketchup
  • 1/2 cup cranberry sauce
  • 1/4 cup white horseradish prepared

Makes: Sauce serves 8.

Fill large star pan with water to 1 inch depth. Place on level surface in freezer; freeze solid. Place freezer safe bowl on top of ice in center.

Fill bowl with cans of juice concentrate or packaged frozen food to prevent bowl from floating when mold is filled with water. Arrange berries and greens on ice around bowl. Add water to pan; freeze solid.

When ready to unmold, empty bowl and measure cup. Pour hot water into bowl and cup to loosen from ice; lift out.

Dip pan in warm water to remove ice molds from pans. Return molds to freezer until ready to use.

When ready to serve, arrange greens on a waterproof serving tray with sides. Top with ice molds. Fills with shrimp. Serve with sauces.

Cranberry Cocktail Sauce

Mix all ingredients until well-blended. Cover: refrigerate several hours before serving.
