Mom's Heartfelt Egg Bake

Mom´s Heartfelt Egg Bake is as easy to make as it is pretty on the plate. Simply beat eggs, milk and biscuit mix together and pour into pans containing asparagus, shredded cheese and diced Canadian bacon. Once the egg bake is in the oven, kids can help make a side of cut fruit. Set mom´s place at the table, or her breakfast tray, with a creative gift that she will treasure, like a disc of your favorite family photos or videos in a CD favor tin decorated by the kids. A mom on-the-go can view it on her laptop or enjoy it during some well-deserved "downtime" at home.

  • 3 eggs
  • 3/4 cup milk
  • 3/4 cup biscuit mix
  • 1/4 teaspoon white pepper
  • 1 cup Cheddar, Colby, Monterey Jack or combination of cheeses finely shredded
  • 1 cup Canadian bacon diced
  • 1 cup frozen cut asparagus spears thawed and cut to 1-inch pieces
  • 1 pkg (1.25 ounces) Hollandaise sauce prepared according to package instructions (optional)


Egg bake serves 6.


Step 1

Preheat oven to 350°F. Spray pan cavities with vegetable pan spray.

Step 2

In bowl, beat together eggs, milk and biscuit mix.

Step 3

Evenly divide cheese, Canadian bacon and asparagus between pan cavities; top with egg mixture.

Step 4

Bake 25-30 minutes or until set. Cool in pan on wire rack 5-10 minutes.

Step 5

Turn out of pan and serve, if desired, with Hollandaise sauce.
