Lily Fair Cake

With this cake, springtime lasts all year long! A bouquet of exquisite lilies is framed by basketweave and an apple blossom border on a design that features techniques from our Flowers and Cake Design Course.

Step 1

In advance: Make flowers using royal icing. Make 7-10 tip 366 lilies with tip 14 star centers using large lily nail. Insert stamens. Make 50-60 tip 101 apple blossoms with tip 1 dot centers. Let all dry overnight.

Step 2

Bake and cool 2-layer diamond cake. Ice smooth in buttercream. Using toothpick, mark a diagonal line halfway down each side. Cover below line with tip 16 basketweave. Pipe tip 16 reverse shell bottom border. Attach apple blossoms at top edge of basketweave with dots of icing. Pipe a tip 12 mound of icing on cake top. Position lilies.
