Hoofs on the Roofs Cake

The stage is set for Santa’s fantastic voyage. His candy reindeers all at attention and Mr. Claus safely tucked away in his cozy candy sleigh. All ready to hit the elements on a cake decked with stars and magical clouds.

Step 1

In advance: Mold candy sleigh, reindeer and Santa.

Step 2

For Sleigh: Position sleigh cutter from set on non-stick pan, pour in melted green candy 1/8 in. thick; Chill until firm. Repeat to make opposite side of sleigh. Fold a sheet of aluminum foil into a 4 x 3 in. dam; fill with melted green candy 1/8 in. thick. Chill until firm; unmold. Bring to room temperature before cutting. Using ruler and knife, cut a 1 x 1 in. front and two 1 x 1 1/2 in. pieces for bottom and back of sleigh. Assemble sleigh on waxed paper using melted candy in a cut parchment bag. Tint portion of white candy gray using black color. Pipe gray runners and white snow along top. Chill until firm.

Step 3

For Reindeer: Tint portion of melted white candy black. Add a small amount of light cocoa candy to white for antlers. Using piping method, mold 6 reindeer filling only body area of Santa & Reindeer Pretzel Mold. Chill until firm; overpipe to reinforce body. Chill until firm; unmold. Attach lollipop stick to back legs at an angle using melted candy. Let set.

Step 4

For Santa: Tint portion of melted white candy with a small amount of red candy for face. Mold Santa without pretzel using piping method.

Step 5

Prepare 3 in. high cake for rolled fondant. Tint 72 oz. fondant light blue. Cover cake; smooth with Fondant Smoother. For cake sides, roll out remaining blue fondant 1/8 in. thick. Imprint star design following instructions on Imprint Mat package. Cut strips to fit cake sides; attach with damp brush. Add a small amount of White-White to piping gel. Using tip 1, outline stars, then use decorating brush to fill in area. Using full-strength White-White and fine tip brush, fill in swirls; repeat 2-3 times if needed. Using buttercream, pipe tip 3 beads on side seams.

Step 6

Position candy sleigh on cake top. Insert front row of 3 reindeer lollipops.Using dots of melted candy, attach 15 in. ribbons from reindeer to inside of sleigh; start with reindeer farthest from sleigh and leave some slack in the ribbon between reindeer. Insert back row of reindeer and repeat. Attach Santa in sleigh with melted candy. For clouds, roll white fondant balls 1/2 to 1 in. diameter. Shape together 3-5 balls and cover with a thin sheet of fondant. Sculpt fondant to shape with veining tool. Position clouds at bottom border.
