Cake serves 60
Bake and cool two 2-layer cakes. Ice cakes smooth with white buttercream icing. Prepare for stacked construction and fondant covering. Cover cakes with 72 oz. white fondant and stack cakes. Position on foil-wrapped cake board.
Divide 15 oz. fondant and tint: 1 oz. each red, rose, yellow; 4 oz. each orange and violet; and 2 oz. each blue and green. Mold six orange birds with blue dot eyes, top and bottom orange flower borders, green leaf border, 12 small and six medium red hearts, six rose double hearts, six large violet medallions with sky blue centers, six medium sky blue medallions with yellow centers, 12 small yellow hearts.
Divide cake into sixths. Attach fondant pieces to cake with piping gel and decorator brush, aligning decorations on tiers.
