This cake is a step up from other graduation cakes. This beautiful two-tiered cake features a diploma and mortarboard that you can personalize to really celebrate your graduates.

Step 1

In advance: Make royal icing floral garlands, using 35 tip 102 apple blossoms with tip 1 dot centers and 30 tip 104 roses with tip 12 bases. Also: Make candy plaque mortarboard in Topping Off Success pan using painting method. Refrigerate until firm; unmold. And: make diploma.

Step 2

Prepare 1-layer cakes for rolled fondant. Tint fondant blue. Cover cakes; smooth with Fondant Smoother. Prepare for Push-In Pillar Construction. Pipe tip 18 shell bottom borders using buttercream.

Step 3

At reception: Assemble cakes. Insert 1st flower spike into back of 8 in. cake; insert 1st garland section and curve around and down to bottom cake. (If needed, place a small amount of fondant in flower spike to secure garland.) Insert 2nd flower spike in back of sheet cake at end of 1st garland. Insert 2nd garland section and curve around cake to the front. Position diploma. Cut white plastic dowel rods to support candy plaque on angle. Position and attach candy plaque with melted candy. Position topper.
