Beef Wrap With Cherry Salsa
Beef Wraps with Cherry Salsa provide your family with a quick meal. Wrap strips of savory Certified Angus Beef with cheese and spinach leaves in a flour tortilla, top with cherry salsa, and watch their mouths water.
Ingredients:
- 4 lrg flour tortillas flavored, if desired
- 1 pound cooked Certified Angus Beef® brisket left over from the Brisket With Cherry Barbecue Sauce), cut into thin strips
- 4 slices provolone cheese
- 1 cup fresh spinach leaves
- cherry salsa
- 1 cup Northwest fresh sweet cherries pitted and halved
- 1 cup yellow tomato seeded, chopped
- 1/2 cup sweet yellow onion chopped
- 1 cup yellow or red sweet pepper chopped
- 1/2 cup canned crushed pineapple drained
- 3 tablespoons Cilantro finely chopped
- 2 tablespoons kosher salt
Makes:
Beef wrap serves about 3 1/4 cups.
Instructions:
Step 1
Preheat oven to 350°F.
Step 2
Wrap tortillas in a damp paper towel and foil; place in oven until warm, about 10 minutes.
Step 3
Heat brisket through in microwave or on stove.
Step 4
To serve, place cheese, spinach and brisket in tortilla; top with Cherry Salsa. Roll tortilla; cut in half.

Makes 4 servings

Combine all ingredients; chill at least one hour.
