Two days in advance: Make mortarboard. Tint 4 oz. fondant blue; add 1/4 teaspoon
Gum-Tex. Roll out 1/8 in. thick. Use pattern to cut out mortarboard. For base,
cut a 3/4 x 2 3/4 in. long strip. Shape into 2 1/2 x 1 1/2 in. wide oval; secure ends using
damp brush. Let pieces dry on cornstarch-dusted board for 24 hours. Attach
mortarboard to base using thinned fondant adhesive.
Also in advance: Prepare hands. Tint
4 oz. fondant light brown; add 1/4 teaspoon Gum-Tex. Roll out 1/2 in. thick. Use
pattern to cut hands (reverse pattern for second hand). Insert Lollipop Sticks,
leaving 2 1/2 in. extended at bottom. Wrap fingers of one hand around 4 in. long
dowel rod; let other hand remain flat. Let both dry on cornstarch-dusted board.
Bake and cool cake using firm-textured batter such as pound cake. Use knife
to trim and flatten ears, muzzle and arms. Use icing to smooth and level areas
around eyes and between legs. For arms, cut two dowel rods to 4 in. long. Fill
end with fondant; insert hands. Push 2 in. deep into cake sides.
soles of shoes and shirt area. Pipe tip 3 outline eyes and gown neckline. Use tip
3 to outline and fill in: mouth; tongue; nose; tie with layered knot; collar. Smooth
with finger dipped in cornstarch. Cover face and hands with tip 16 stars. Pipe
tip 18 swirl hair. Cover gown and shoes with tip 18 stars.
Position cap. For rope,
tint 1 oz. fondant yellow; roll two logs, 1/8 x 4 in. long. Twist together and attach
over edge of mortarboard using damp brush. For tassel, cut a 1 1/2 x 1 in. strip;
use scissors to cut 1/2 in. deep slits, 1/8 in. apart. Roll and attach strip around
rope, securing with damp brush. Roll out some blue fondant 1/16 in. thick. Use
wide end of any standard tip to cut circle; attach over rope for top button. Tie
ribbon into bow and attach to diploma with adhesive.
