Prepare cookie dough stirring in ground almonds. Roll out dough 3/16 in. thick. Use giant gingerbread boy cutter set, cut one solid cookie and one with features cut out. Bake 10-12 minutes and cool completely.
Use spatula to spread jam on solid cookie and sandwich with top cookie with cut out features.
Make tie. Slightly roll spice drop flat on surface sprinkled with granulated sugar.
Use scissors to cut two triangles and roll one ball for knot on tie.
Prepare buttercream icing. Use tip 3 and white icing to attach tie.
Decorate cookie. Use tip 3 and white icing to pipe zigzags on wrists and ankles. Use tip 3 and white icing to pipe swirl curl for hair. Let dry until set.
