Shaped fondant teddy bears are popping in to celebrate the big One! An oval cake and a sheet cake are trimmed and joined to make this one-of-a-kind design.

Step 1

In advance: Make fondant letters. Add 2 teaspoons Gum-Tex to 23 oz. fondant. Tint: 10 oz. yellow, 6 oz. violet, 7 oz. green. Roll out 1/8 in. thick as needed. Use patterns to cut O-n-e; set on waxed paper-covered boards. Tint remaining yellow, violet and green fondant a darker shade. Roll out 1/8 in. thick as needed. Cut 8 x 1/2 in. wide yellow strips. Attach, about 1 in. apart, using damp brush; trim as needed. Cut violet circles using smallest round Cut-Out; attach. Cut 8 x 1/4 in. wide green strips. Attach, about 3/4 in. apart; trim as needed. Reserve remaining dark fondant shades for bear hats. Brush letters with matching Pearl Dust.

Step 2

Prepare and cover base board with 40 oz. fondant tinted rose.

Step 3

Bake and cool 1-layer cakes. Using oval pan as a guide, trim end of sheet cake where oval ?O? cake will go (combined cakes will be 19 in. wide). Position cakes on prepared base board. Ice cakes smooth.

Step 4

Pipe tip 12 bead bottom border. Position letters (?e? will extend about 1 in. beyond edge). Make and position fondant teddy bears.To make Teddy Bears: add 1/2 teaspoon Gum-Tex to 8 oz. chocolate fondant. Roll 1 in. to 1 1/2 in. balls to shape full and partial bodies; position on cake. Shape each arm (about 3/8 x 1 in. long) and leg (about 1/2 x 1/2 to 1 in. long). Attach in assorted poses using damp brush. Insert bear heads. For hats, roll reserved dark yellow, violet and green fondant into 1/2 in. balls; make two of each color. Shape into 3/4 in. high hats. Attach using Piping Gel. For pompoms, roll out fondant 1/8 in. thick. Cut a 1/2 x 1 in. wide strip. Use scissors to cut 3/4 in. deep slits, 1/8 in. apart. Roll strip and pinch uncut edge to secure; separate fringe. Attach to hat with Piping Gel.

* Combine Brown with Red-Red and Black for chocolate brown fondant shown.
