I am an experienced baker but found this one a little messy but fun as I was making it with the kids. Really make sure your ice cream is cold and here is a quick tip, take the ice cream out and let it soften slightlt, then spread a layer close to the thickness you want into a square shape bigger than teh cutter. Then freeze it again. Once solid, cut out the shape and it fits easier this way. I love ice cream but I also made a version with whoopie pie frosting inside. Remember your ideas are only limited to your imagination.

I am a begginer at decorating and this was a hit with the kids that came to visit during the holidays. One little guy told his Mom. This is the biggest cookie I ever saw. If Me as a beginner can do this it will be win for someone with more talent. Love gingerbread and with ice cream so yummy and the kids cleaned their plates. I think he would be good in chocolate or a fun fetti for summer. You could say he had too much sun and got colored splotches. Just way toooo cute. I had a little plaque that says perfect man, Not too sweet, doesnt give problems and when you want, just bite his head off for delicious treat. Got lots of laughs

During the holidays i fill the cookies with candy cane ice cream to give it a more festive feel. I pre make them and wrap each in parchment so they're ready to eat when you are.
