Step 1

2 DAYS IN ADVANCE

Make branches. Make several copies of branch pattern. Place pattern on top of cake board; cover with parchment paper. Prepare royal icing following recipe directions. Use pattern and tip 3 to pipe 360 to 400 branches for each treat. Make extras to allow for breakage. Let dry 24 hours.

Step 2

1 DAY IN ADVANCE

Bake and cool cakes in 3-D mini tree silicone mold supported by cookie sheet. Prepare buttercream icing following recipe directions. Use spatula to ice cakes smooth. Place cake on plate or foil-wrapped cake circle (cakes cannot be moved once branches are attached). Use tip 3 and white icing to pipe a 1/4 in. mound on top of tree to increase height. Use spatula to smooth.

Step 3

Attach branches. Use tweezers to attach full-length first row branches 1/2 in. from bottom of tree. Branches should be 1/4 in. apart, with ends 1/2 in. from cake surface. Use tip 3 and white icing to secure branches to tree, if needed. Continue attaching branches around cake.

For second row, trim branches to 3/4 in. Attach branches 1/8 in. above first row, between first row branches. Continue attaching branches 1/4 in. apart around cake. Repeat this step for third, fourth, fifth and sixth rows.

For remaining rows, trim branches to 5/8 in. Attach branches 1/4 in. apart, to cover cake.

HINT: Make a paper template for sizing the branches in each row. Use a full-size branch for first row, a 3/4 in. branch for rows 2 through 6 and a 5/8 in. branch for remaining rows.

Step 4

Complete tree. Use tip 3 to pipe a ball 3/8 in. dia., on top of tree. Attach white Sugar Pearls to ball. Use tip 3 and royal icing to attach a Sugar Pearl to end of branches.
