I will be assembling and decorating a birthday cake over the next 6 days. Should I refrigerate my un-iced cake rounds for the next 1-2 days until I ice them? Once they are iced and decoration begins, can I keep them on the countertop given the number of days until the event, or should they be refrigerated?

A cake 6 days out? I would bake and freeze the layers until you need to decorate them. Then pull from freezer ice and decorate and deliver the next day.

ditto! I don't know what kind of cake you're making but most cakes are past their prime after three days imho.
