I wasn't sure if you could use chocolate in these molds whether it be moldeling chocolate or just heated chocolate. Is this food safe?

I don't see any reason to not use modeling chocolate. If you do it let us know how it turns out.

You definitely can use modeling chocolate int the gumpaste/fondant molds. This is one of the things they showed us in the Wilton modeling chocolate class.
